In the Summer of 2003, I spent 10 days in Tunisia, attending a friend's tradtional tunisian wedding and spent 5 days going on a tour of the south into the Sahara desert.

Unfortunately, it was twisted out of proportions to trivalise the notion of volunteer work to fit into the magazine's commercial position. I didn't think it was appropriate to categorise it under the 'Travel' section, nor was it fair for them to call it a 'selfless vacation', an oxymoron in itself. This is the original copy. Synopsis: Food is a basic need for sustenance. As the cliche goes, you are what you eat and often, traditional cuisines define one's culture. Different stomachs have different thresholds of tolerance for food it is not accustomed to. Some ingredients dissolve, while others retain their original taste and colour, giving the dish a certain authenticity. The world is a diverse place and whether people, recipes or jobs are imported or exported, the most important thing is the acceptance of differences. To compromise and adapt to changes with an open heart and mind. There are many factors we can't control, but we are capable of decisions and constructive actions. Unfortunately, life isn't fair and there will always be people left behind with little or no choices. For every passionate activist, there will also be an apathetic, apolitical citizen.
